Iberico ham, particularly the renowned Iberico de Bellota, is one of Spain and Portugal’s most celebrated foods. And, it’s no different in the Calancombe Estate Restaurant


Our Iberico ham leg is a huge talking point and one of the most popular menu items in our Devon Restuarant. Here’s a little bit about why it’s so well loved…


The extraordinary ham comes from the Iberico pig, a breed known for its rich lineage and unique diet, which plays a key role in the exceptional quality and flavour of the ham. 


The pigs are primarily fed acorns, which imbue the ham with a rich, nutty flavouring that sets it apart from other types of cured meats.


The production process of Iberico ham is nothing short of an art form. It requires following strict, centuries-old traditions, starting with the highest standards of breeding, diet, and exercise. 


The pigs must roam freely, exercising and grazing on acorns, to qualify for the prestigious Iberico de Bellota title. This rigorous process results in meat with an intense, complex taste and a soft, delicate texture. 


The fat on the free-range ham melts in your mouth, providing a creamy, milky sensation that contrasts perfectly with the robust flavour of the meat.





One of the most remarkable aspects of Iberico ham is its health benefits. Despite its richness, the fat in Jamon Iberico is considered one of the healthiest animal fats in the world, packed with beneficial monounsaturated fatty acids.


A whole Iberico ham, like the one you’ll find at the Calancombe Estate Restaurant, typically weighs up to nine kilograms and is often cured for over 36 months, which enhances its depth of flavour. 


The process of ageing gives the ham a complex and unforgettable taste, making it a true embodiment of Spanish and Portuguese culinary tradition.


In our Devon Restaurant, the Iberico ham is served with pan tomate, a simple yet flavorful dish made of toasted sourdough rubbed with garlic and topped with sea salt, concasse tomatoes, and high-quality olive oil.
